These beef zucchini patties are a staple for me when I'm doing Phase 2 of the protocol. They are tasty and can be made into a naked burger using free foods like lettuce, tomato and topped with sauerkraut. Or sometimes I'll add them to some bone broth with wilted baby spinach :) In this recipe I have used 500g beef mince but it's easy to double the recipe and freeze to have a few on hand. Try adding a teaspoon of turmeric to spice it up, turmeric is great for reducing inflammation. Zucchini Patties-makes 5 500g lean beef mince 5 cups grated zucchini 1.5 teaspoons seaweed salt 1.5 teaspoons chilli flakes 6-8 drops doterra lemon essential oil(or grated lemon zest) 1/2-3/4 teaspoon ground black pepper In a large bowl mix all ingredients until well combined. Mould/weigh into 5 equal portions. Line a heavy based pan over medium heat with baking paper. Cook patties for approx. 5 minutes on each side until cooked through. (Cook in batches if your pan isn't big enough). Serve as a naked burger with free vegetables and a tablespoon of sauerkraut.
